ooking for that perfect summer dish your friends will be
talking about all season? A tantalizing tango of sweet and bold,
crisp and fresh
this salad is sure to spark the taste buds.
A flavorful mixture of mandarin orange slices and feta cheese
combined to compliment the spinach and romaine lettuce topped
with slivered almonds and cherry tomatoes is a sure winner
among any crowd. The presentation of this dish can be as varied
as the items you put in it. It can be set out in a lovely bowl
ready to be tossed on a dish next to your favorite barbecued
ribs or cheese burger. Or it can be arranged in such a way
that your guests may choose what they want by setting each
part in its own bowl. Combined or separated, this salad has a
flavor for everyone. Other ideas to toss in can be sliced chicken,
cranberries, shaved carrots or even finely chopped apple.
Assuming you are making this dish for five adults, you will
need any mixture of lettuce you like
the crisper the better. Plus,
the darker the leaf, the more natural vitamins you gain. As well,
one jar of Mandarin oranges
drained and toweled-dry, about
two handfuls of sliced almonds, crumbles of feta, a dozen cherry
tomatoes
sliced in halves or quarters, and raspberry vinaigrette
dressing to tie it all together. Should you decide to toss in some
grilled chicken (for some flavorful protein), you may want to
consider marinating it in the dressing the night before. Once
you’ve cooked the chicken, put it in a drip-safe freezer bag with
the raspberry vinaigrette to be absorbed by the chicken
it’s a
great way to keep it moist for the next day.
As a low calorie appetizer or tasty main dish, this 20- minute
recipe is an all-around easy way to add a little flavor to your
meal. For dessert, try diced strawberries or cantaloupe on top of
your favorite French vanilla ice cream.
